As summer approaches the kitchen transforms…sometimes you may not even realize it. The natural lighting that reaches into the windows of your kitchen changes the look and feel entirely. Avocado pasta is a healthier alternative to a fettuccini sauce but offers the same creamy texture. This recipe is the perfect summer dish for outdoor barbeques or family cookouts. Here is my favorite recipe:

  • Rotini Noodles
  • 1 avocado (ripe)
  • 1.5 tablespoons of olive oil
  • 2 garlic cloves
  • 1 tablespoon of lemon juice
  • 2 tablespoons of parmesan cheese
  • Pinch of salt and pepper
  • Add vegetables based on personal preference

 
Cook your pasta on a medium boil until complete. For the avocado sauce combine olive oil, garlic, lemon juice in a bowl and stir until smooth. Then add the avocados (without pit) salt and pepper. If you have a food processor feel free to use this. Once the pasta is complete, pour sauce over the noodles. Add vegetables if you like- I think tomatoes and carrots make great additions. Serve hot for a dinner entree or cold for a pasta salad.
